You don't. It is better for animals to be raised by their own kind for various reasons. If they must be removed, a surrogate of the same species is usually trained (beforehand). If need be, a trainer or keeper will take care of the animal. This is extreemly rare and I can assure you, it doesn't happen enough times in a legitimate zoo environment to even keep one person gainfully employed.
